This is a very easy recipe that you can prepare fast because the oven doesn’t need to be pre-heated. We love to have this pound cake with coffee and sometimes my kids will even have it for breakfast although I don’t encourage it.
Equipment
- Parchment Paper
- 2 big bowls
- Stirrer
- Oven
- Baking dish
Ingredients
- 7 oz Self-rising flour
- 7 oz Sugar
- 2 Eggs
- 7 oz Heavy cream
- 1 tbsp Lemon juice
- 1 Lemon (Zest)
- 1 cup Powdered sugar for the glaze
- 1 Lemon juice for the glaze
Instructions
- Cover your baking dish with parchment paper.
- Mix the sugar, lemon zest, flour in a big bowl.
- Add the eggs, mix.
- Add the lemon juice, mix.
- Add and mix the heavy cream a little at a time.
- Bake at 350F for 35 to 40 minutes (test by inserting a toothpick in the middle. If it comes out dry, it’s ready).
- For the glaze:
- In a bowl, add powder sugar.
- Slowly mix in the lemon juice until it resembles the consistency of toothpaste.
- Cover the pound cake.
- Let sit for 30 minutes until the glaze is set.
- Once set, pour over cake.
